Slimming World Thai Green/Red Curry

Ingredients: Serves 4 - 5 syns per person
3 large chicken breasts, chopped into cubes
2 large onions, chopped
1 large red pepper, deseeded and chopped
1 sweet potato, sliced and cubed
200g mushrooms, chopped
400ml can light coconut milk (17.5)
3 tbsp thai red/green curry paste (3)
1 tbsp sweetener
Fry light
Spray a large frying pan or wok with fry light, and fry the chicken until cooked. Add the onions, mushrooms, peppers & sweet potato and fry for 5 minutes. Add the curry paste and fry for 4-5 minutes. Add the coconut milk and sweetener, stir and simmer for 15-20 minutes until thickened.
Serve with rice.
